I love your suggestions in the fourth paragraph for shaking things up. The concept of experimenting with a kishōtenketsu structure is new to me, so I read the article you linked to with interest. Practicing with omniscient first, second or third person would definitely lead to some shaking up, though not in the same piece of work. I have never tried it before, but I do very much enjoy reading a well-written novel crafted using an epistolary voice. Or even mixing in parts of the novel written in an epistolary voice can spark some variety and innovation. Do you consider trying this as a means to to try to get off that plateau?
